Product notes

Ground molokheia is made from the leaves of the water spinach, which are carefully harvested, dried and then ground into a fine green powder. Highly prized in the traditional cuisine of North Africa and the Middle East, it has given its name to an Egyptian dish. It is characterised by its vegetable flavour, somewhere between sorrel and spinach.

A staple of Tunisian cuisine, molokheia is traditionally cooked in a slow-cooked sauce, resulting in a creamy texture and a unique aroma. It pairs particularly well with beef, lamb or veal, but can also be used in vegetarian dishes.

Its characteristic dark green colour and deep flavours make it an essential ingredient in authentic recipes. Slow cooking allows its full range of flavours to develop, resulting in a rich and aromatic dish.

Serving suggestion: mix the molokheia with oil before gradually adding water or stock. Leave to simmer for several hours over a low heat to achieve a velvety texture and fully developed flavours.
